8.00   Pick up by bus from your hotel in Hoi An for the trip to Duy Hau Fishing Village. After a short ferry trip, you will see the fishermen bring their catch from a night at sea on the river delta. Look around the fish market and drop by a small business to see how locals smoke and dry the anchovies which are then fermented to make fish sauce.
9.30   Enjoy a leisurely boat ride back to Cua Dai fishing village to watch and try two unique local fishing techniques. The big fishing net, the "Ro", is fastened to bamboo poles at the riverside and submerged under water to be lifted when enough fish have collected. Local fishermen also demonstrate how to correctly throw the small nets, the "Chai", in a big circle for the best catch.
10.30  Explore a water coconut palm paradise in our unique round basket boat known locally as a "Thung Chai". Try casting the net your-self and see just how much skill it takes to master this fishing technique.
12.30  Participate in a cooking class, recreating 3 local specialities: Ban Xeo (savoury Vietnamese pancake); Tam Huu (Vietnamese Salad) and Hoi An Spring Rolls.
15.00   Leisurely ride back to the hotel.
